There is no breakfast that rings more of my childhood than pancakes. I have images of both my mother and father flipping flap jacks on Sunday mornings. Now that I have a family of my own I have come up with a tried and true yummy whole wheat pancakes.
Whisk dry ingredients until everything is fully incorporated:
- 2 cups whole wheat flour
- 1/3 cup granulated sugar
- 1tsp. Baking soda
- 1 tblspoon baking powder
- 1/8 tsp. salt
In a separate bowl whisk together wet ingredients :
- 1 egg
- 1 cup of almond milk
- 1/4 cup vegetable oil
- 2 tblspoons apple cider vinegar
Add wet ingredients to dry ingredients. Mix the batter until combined ( Do not over mix)
Preheat your skillet to a medium-high temperature. I like to coat my skillet with butter, but any oil will do the trick. Add approximately 1/2 cup of batter to hot oiled skillet and let cook until bubbles form on the surface of the pancakes, then flip. Cook an additional 2 minutes, then remove from skillet. Enjoy!
