Winter Stew: Chicken Sausage and Sweet Potato

It is officially winter and that means stew time! It has been particularly rainy and cold here in Atlanta so I have been craving comforting, hearty meals.

I am making a concerted effort to eat healthier and be conscious of what I consume.  I bought a few sweet potatoes because they are a nutrition packed root vegetable. The meal really started with these bad boys and I worked with the ingredients to highlight the star, the sweet potato. If you’re like me, you’ll look at the key ingredients of a recipe and get inspired to make your own version and ignore the rest of this post.   For those that like to follow the recipe, here you go!

  1. 2 large sweet potato’s (peeled and cubed)
  2. 1lb smoked chicken sausage links (chopped)
  3. 1 cup lentils 
  4. 16 oz. can stewed tomato’s 
  5. 3 cups water or broth 
  6. 1 tablespoon Italian seasonings
  7. 1 tablespoon garlic powder
  8. Season salt to taste

In a large pot brown the chicken sausage in a tablespoon of oil. Once browned add sweet potato, tomatoes, lentils, and seasonings. stir until well incorporated. Next, add water until it covers the ingredients. 

Bring to a boil and turn to simmer. Let simmer for one hour with lid on. Let cool and serve. Enjoy!

  1. Wow! The recipe is super easy! And it looks great! The italian seasoning component sound interesting and I’m sure the lentils made it very hearty! Do you think Cornbread or crusty bread would go best? I will make this really soon. Corn Chowder is pretty good and a recipe I would like to share!
