I’m trying to eat better, so I made beets!

PURPOSEFUL LIVING IN THE HOME

However, A healthy lifestyle also means the foods you eat. I purchased a Beet a week ago in preparation for a healthier lifestyle. I know, Beets are one of those root vegetables that you either love it or you hate it. I happen to like the flavor but never really know what to do with them. My golden rule is, when in doubt ROAST! Sooo, thats exactly what I did, roasted them. I think sweet potatoes and beets have a similar flavor profile so I paired them together and it was amazing. Do yourself a favor and try this recipe. It will cost you about 3 dollars in ingredients so it’s cost effective as well as delicious. My 3 year old even loves it so that’s saying a lot.

Roasted beets and sweet potatoes

1. Beets

2. Sweet potato

3. 4 cloves of fresh garlic

4. 1 tsp. Salt

5. 2 tblspn. Olive Oil.

6. Goat cheese (optional)

Preheat oven to 350 degrees.

Dice your beets and sweet potatoes in equal size cubes. Add 4 whole garlic cloves, salt and oil to the beets and sweet potatoes. Make sure that they are evenly coated in oil. Cover with foil and bake for 1.5 hours. Once cooked sprinkle with cheese.
